Austrian Apple Pancakes Recipe with Protein

Hello friends,

It’s apple season! The next time you’re in the mood for fall pancakes, try these for lots of taste, but less of the guilt!  About every month or so {year round}, I make these pancakes.  This is my Nana’s quite old {authentic Austrian} from scratch recipe.

Fond memories, I loved my Nana’s breakfasts. She used to make the best egg toast, rice pudding, or my absolute favorite…yeast & fruit pancakes! I know, the idea of adding yeast to your pancakes might sound strange to most of you, but these fluffy little cakes are just amazing. Similar to Russian blinis or Polish racuchy, ring a bell…anybody?  It’s apple season! I love shredded apple in pancakes.  Certainly, you can top them with whatever your heart desires, in my opinion they are tasty enough as is {I was one of those weird kids that topped her pancakes with strawberry jam or peanut butter or applesauce or raisin sauce}. There’s another forgotten recipe gem, “Raisin Sauce”…what the heck happened to raisin sauce..you never see that anywhere anymore do you?! Ho hum, plain pancakes with maple syrup…no thanks, not a fan…not this weird kid.

My pancakes need to be fluffy, flavorful, syrup free and now that its 2015… protein packed too. So I added in my generational touch and tossed in some protein powder. {ham steak on the side would have been Nana’s protein}. I hope Nana would approve of my twist. Viola!

Can we please take a moment to appreciate a pancake with enough flavor it doesn’t need sticky syrup? So… do you admire the fluffy texture? Does the applesauce on top intrigue you..or maybe otherwise?  For me, it’s fluffy flavorful muscle or nothing. That’s my motto…for pancakes.

Austrian Apple Pancakes with Protein

  • Servings: 8-10
  • Time: 45 mins
  • Difficulty: easy
  • Print

  • 1 pkg yeast
  • 2 cups warm milk
  • 2 cups flour
  • 2 lg eggs
  • 1/4 cup sugar
  • 1/2 cup shredded apple
  • 1/4 scoop protein powder
  • 2 Tbs melted butter
  • pinch of salt

Mix all ingredients together (do not over-mix).  Set aside and let bubble 40 min in a warm place.   Brush a large non-stick skillet or griddle with butter and heat over medium-low heat. Add ¼ cupfuls of batter and cook until bubbly on top and golden on the bottom, about 4 minutes. Flip and cook until golden on the bottom, about 2 more minutes.
