Avocado spread

Avocado and I have always been good buddies. I’ve never been one to be able to eat a small piece of avocado and call it quits. I’ll take lots o’ avo please!

I’m also a huge fan of enjoying Avocado throughout the week – it doesn’t just need to be Cinco de Mayo, there are plenty of ways to incorporate avocado into your diet in a more moderate way than downing a big bowl of Tortilla Chips and guacamole (though that does sound pretty fabulous right now).

While avocado is high in healthy fats, its low in protein. The way I see it, it’s the lack of protein that needed fixing.  I managed to get that rich creamy flavor I adore, while adding more protein, without adding a ton of calories and saturated fat.  How? With the help of an old recipe I found from Jack Lalanne. I tweaked it, using present-day ingredients.   This recipe increases the protein x3, so you get the best of every world!  Creamy, savory and protein packed!  Enjoy!

1 Ripe Avocado mashed

1/2 cup Chive & Toasted Onion Cottage Cheese

1/4 cup Plain Greek Yogurt

Garlic to taste

Dash of Lemon Juice

Dash of Paprika

Serve with Raw Vegetables as a dip or as a Spread on Sandwiches & Wraps.
