Baked Avocado Parmigiana Recipe

Oh my ever-loving goodness, is this good.  Have you tried it?  Baking an avocado? If you love avocado, as much as I do…try this…this is delicious. You wont believe the next level of flavor you get from simply baking one. Wonderous, Baked Avocado Parmigiana Recipe!

Creamy, warm, and luscious.  Holy guacamole…the potential!

I’ve noticed a lot of different variations of baked avocado online lately. Versions with a baked egg or with seasoned rice or veggie quinoa or various cheeses.  I had to try it.

FitFoodiemama .com made one called  “Italian Baked Avocado for One”, using feta/goat cheese, panko, spices and sauce.  Voila, inspiration!

I used Ricotta.

I’m truly sorry for this transgression. It’s just that Ricotta is all I had, and I did not want to call this dish “Baked Avocado Eye-Copycat-Talian.” Just doesn’t have the same ring to it.

So I just grabbed a handful of ingredients that I had on hand, mixed them together, topped the avocado with it and after a 10 minute bake, viola, it was ready.

Baked Avocado Parmigiana

  Directions:

Slice ripe avocado(s) in half and remove pit.

In a bowl, add ricotta and some Parmesan/Romano/Asiago…anything in that family, or a combination of the three.  Mix in your favorite italian seasoning, garlic, salt and pepper.

Top with your favorite tomato sauce and sprinkle with some parmesan cheese.

Bake at 350 degrees for 10 minutes!  Have I mentioned this is delicious?  Grab a spoon and dig in!
