Paleo Zoodles

Tried out my latest kitchen gadget.  In case you missed it… I have a secret love for these novelty tools.  Try ALL the gadgets!  Thankfully a band of inventors are hard at work creating these things, saving me from the chore of cooking. Want to turn your fresh zucchini into noodles shaped like spaghetti?  YES, yes I do.  There’s a gadget for that!  Yep, I bought one, cool huh?!  Of course, I’ve gotta share and you’ve gotta see!  Paleo Zoodles

The gadget is a Paderno Spiralizer, you can find one online on Amazon $$ and Williams Sonoma $$$.  It’s simple to use and produce spiral cuts, shoestring and vegetable noodles for adding new texture to countless dishes, stir-fries and salads. The spiralizer blade worked good on the soft zucchini.  I cant wait to try it on some other veggies!

Look out cucumbers, carrots and potatoes your next.  I’m feeling “inspiralized” with combinations and topping ideas, curly pesto potatoes, asian slaw or cucumber with fresh avocado dressing?

A veggie alternative to pasta if you are looking to cut back on Carbs.  I made a chilled salad with a dressing recipe that I found online at Southern Living. It turned out light, fresh and tasty.

Paleo Zoodles

Ginger Basil Vinaigrette Recipe

1/2 cup loose packed fresh basil leaves chopped

2 tablespoons fresh lemon juice

2 teaspoons minced fresh ginger

1 clove garlic minced

1 teaspoon honey (or to taste)

1/2 teaspoon kosher salt

2/3 cup light oil

Process basil, lemon juice, ginger, garlic, honey, and salt in a food processor until smooth. With processor running, pour oil in a slow, steady stream, processing until smooth.
