4 Ingredient Melania Shortbread Cookie Recipe

Hey everyone!

How are you? Christmas is coming in less than a week! In 4 days to be exact! I can’t believe how fast time goes. Can’t believe it. Way too fast. Agree?

For December we’re {The Recipe ReDux Crew} playing a little party game with our recipes: Grab a Book & Cook 2016!  ReDux the recipe on page 201, 16, 216 {or any combination of the number ‘2016.’}  Off we go!

All things considered, I’m glad I started working on this Redux early, because it was not easy.  I narrowed my choice down to cookies and then got out all my cookbooks and visited them with the scrutiny of Goldilocks. Then I found this old recipe that felt relevant.

The recipe today, according to page 216 of my cookbook is listed as “First Lady Cookies.” Now redone and renamed “4 Ingredient Melania Shortbread Cookies.” Fantastic because it’s actually the first time I’ve ever made it!

It’s actually a very old recipe dating from the revolutionary war. Coincidental, because it’s been a while since I’ve made cookies…{maybe not quite that far back.}  HA! Ironically, Melania and I might actually have this one thing in common. lol Of course, that’s where the similarities undoubtedly end.

At the same time, this recipe got me thinking.  I wonder, what it will be like for Melania to be the first lady of the United States? Wholeheartedly, I feel confident in her ability to be a social hostess.  By the same token, I’m curious to see how she balances being perceived as a quasi “Queen” of the people while also being a “commoner” who understands their problems and lives.

In all honesty, I’m quite sure Melania doesn’t bake cookies. I’m sure she has people cooking and doing so much for her. Nor do I get the impression, that she even likes to bake.  Presumably, she not short on “bread” {cash} or at 5′ 11” short in the height category.  As beautiful as she is, I don’t get the impression that she indulges in buttery crumbly cookies to often either.

In any case, please know that the original recipe is from my “1001 Cookie Recipes Book”, page 216. I love simple and classic recipes, they never fail me! I pretty much followed the recipe, but I pared down a few ingredients in the attempt of making it a little healthier (less sugar and less fat).  To be more exact, 25% lighter and healthier.  I hope you enjoy them!

Ingredients

Instructions
  1. Preheat the oven to 350. Line 2 baking sheets with parchment paper
  2. Put the flour in a large bowl
  3. Melt the butter. Add the hot butter to the flour in a steady stream, beating constantly. Ben in the sugar. Beat in the eggs
  4. On a floured surface, roll out the dough to 1.4 inch thickness. using a 1 1/2 inch round cookie cutter, cut ou the cookies an place 1 inch apart on the baking sheet.
  5. Bake for 12 to 15 minutes, until lightly colored. Transfer to wire racks to cool.
