Bacon Sriracha Egg Salad Recipe

This Bacon Sriracha Egg Salad recipe is a tasty Thai twist on the classic egg salad recipe that can be served on a salad, as a topping with crackers or as a lovely stuffing for wraps and sandwiches. It’s also the perfect recipe to make when you have some hard-boiled eggs that you need to use up!

Believe it or not, as awesome as eggs are…they are not high on my favorite list. So when I do eat them, I usually find myself heaping in a bunch of other ingredients to make it taste more like something else.

The combination of Greek yogurt, bacon, onion, dill and cilantro give this salad so much flavor. My family is always down for any type of Thai spiced meal and I had some hard-boiled eggs and bacon in the fridge that needed to be used, so the Bacon Sriracha Egg Salad was born.

And I’m so glad it was! My family devoured this egg salad in about 15 minutes flat. There’s so much addicting flavor here, that you just won’t be able to get enough.

Besides scrambled eggs, this is my new favorite recipe.  I don’t like poached eggs, soft-boiled, sunny side up or heaven forbid… runny eggs…forget about it. Yet, I absolutely love these classic flavors paired with Sriracha and dark spinach greens, it makes for a light, refreshing, flavorful meal. This meal will keep you full and satiated thanks to the bacon and eggs, packed with high quality protein and all the B vitamins.
