My Boston Cream Banana Babies are made with ripe baby bananas and classic pastry cream!  They are Primal, Gluten Free, Paleo and 99.5% Whole30 compliant, so you can have one {or two} and leave the guilt elsewhere.

First of all, I’ve got a major thing for Banana Cream and Boston Cream. Like, such a thing that I needed to distract myself by creating a much healthier version. Between the classic chocolate ganache, luscious carbs and the velvety pastry cream…it beckons you to bury your tongue in it and not resurface for air until you are healed from the mystical delicious trio. Oh? You didn’t know Boston Banana Cream had mystical healing powers?

Well it does.

Banana Cream and Boston cream are so misunderstood, always typecast as a Donut or Pie and that’s NOT OKAY. This tasty trio has big dreams and plans to branch out into other amazing roles! Wholesome, healthy roles with zero dairy, zero added sugar or gluten.  Someone, give this recipe an Oscar or a Nickelodeon kids choice award or at the very least two California thumbs up! They’re that good, just sayin’.

So those baby bananas. When it comes to flavor, they’re legit times 52. Have you seen these adorable mini bananas in your store? No? Look for them, buy them, try them. Because, together in my recipe are a match made in healthy heaven + bite sized perfection.

My Boston Banana Cream Babies are made with all natural ingredients and are as sweet as can be. Wholesome, delicious, zero dairy with zero added sugar.  Of course, its impossible to please everybody…they do have almonds.  My apologies to tree nut allergy peeps, please attempt this recipe by omitting the almonds.  If your allergic to coconut…then sorry, I got nothing for ya this week.

Ingredients
Crust
Banana Cream
Chocolate Topping

Instructions
  1. Crust: Line a mini muffin tin with paper liners or use silicon cups. Add the crust ingredients to a food processor and pulse until you get a coarse, crumbly consistency. Add more dates if needed for sweetness. Scoop about 1/2 tbsp of filling into each cup. Press filling into the bottom of the liners to make a crust for each tart. If there is extra filling, you can eat this or use to make thicker crusts. Or eat it....hint wink 🙂
  2. Banana Cream: Break the banana into chunks and combine it with the almond and coconut milk in a blender. Blend for 30 seconds until smooth.Pour the ‘banana milk’ into a saucepan on a medium heat for a few minutes, reducing to a low heat when it starts to simmer. Milk can boil very quickly – even milk with bananas in – so keep an eye on it!Separate the egg yolk and white and add the yolk to a small bowl. Spoon the flour in and mix well with a fork to form a paste. Spoon a little of the warm banana milk into the egg and flour, mixing in well with a fork to stop the egg from cooking! Add a little more banana milk, and repeat until the bowl is almost full.Pour the bowl into the saucepan of remaining banana milk, and stir well to combine. Simmer on a low heat for 10 minutes or until it has reached its desired consistency – thick and comforting.
  3. Chocolate Topping: Combine cocoa powder with the coconut oil and coconut cream in a blender. Blend for 30 seconds until smooth.
  4. Add crust, layer banana cream and top with chocolate. Refrigerate until set or firm approx 1-2 hours. Enjoy!
