PB Oatmeal Cookies

Hello friends,

Protein, protein, protein.  This may come as no surprise to some of you, but a snack bereft of protein is like a bodybuilder not lifting weights or a woodchuck not chucking wood: It’s just not going to happen {you remember that rhyme, right?!}.

Okay, I can quote obscure rhymes and snack however I like, but that’s not what you want.  I mean you’re looking for a recipe that has some substance. A cookie you can take anywhere and feel great about eating.  You gotta upgrade your cookie recipes to include protein.

What if I told you, you can enjoy the luscious splendor of creamy peanut butter with warmly-fragranced cinnamon? And satisfying crunch of nutty oats? And the soft chewy sweetness of raisins?  And the sticky sweet romance of honey? Top that off with the benefit of protein?  Boom.  Now we’re talkin’ cookies.

Okay, now let’s talk about how these cookies look. Do they look healthy to you? Yeah, me either. Surprise! They are SUPER healthy! Well, maybe not as healthy as raw spinach or steamed broccoli, but completely healthy in a cookie kind of way… anyway.

More about these cookies. So dang good and protein packed. They have a couple different protein sources. Foremost protein powder, I know, protein powder, in cookies. It’s preeety dang amazing!! And it contributes 22 grams of protein to this recipe. Then there is some peanut butter which also packs quite a bit of protein – 32 grams in the 1/2 cup I used for this recipe.

The other good ingredients in these cookies are old-fashioned oats, rice krispies, a little bit of cinnamon, some honey, and a tiny bit of vanilla extract.

These cookies seriously take about 5 minutes to make. And that includes removing all the ingredients from your pantry and putting them back! Did I mention they are no-bake?!  Boom.

Instructions
  1. In a small microwavable bowl, combine the peanut butter and honey.
  2. Microwave for about 30 seconds and then stir until completely combined. Stir in the vanilla extract, salt, protein powder and cinnamon. Mix well.
  3. Add in the old-fashioned oats, rice krispies cereal and raisins. Mix until completely combined. Separate "dough" into small balls and form cookies.

Store cookies in refrigerator.

Substitutions - Peanut Butter:  Nutella, Almond Butter or any Nut Butter.  Oatmeal: Sunflower seeds.  Honey:  Agave or Maple Syrup
