Hi there,

I’m back with a new easy recipe for Crispy Baked Onion Rings.  Okay – so, I created this recipe. Well, I didn’t make up the WHOLE thing, but the part I did make up sure does make it even MORE fabulous than its original state and I am totally taking credit for the transformation and that’s just that.

Onion Rings, an old favorite…that I havent made for about 15 years. Why? Well, I havent made them in forever because whenever I think of Onion Rings, I think of greasy fried food. I don’t eat much fried food.  The original recipe called for buttermilk.  Of course, I didn’t have buttermilk in the fridge either, {it kinda goes hand in hand with fried food, hello}.  So I used greek yogurt as a substitute for the buttermilk and baked the onion rings and added spices instead. Might I add…plain greek yogurt is amazing, how did we ever live without it? Seriously, this stuff goes everywhere, am I right?!  What’s not to love?

Super easy to do, honestly a monkey could make these onion rings. It is messy though, so fair warning. You could use tongs for dipping them, but it’s just as much fun to bread your fingers right along with the onion rings. Dont ya think?! No? Maybe it’s the messy 5-year-old in me?  Somehow it makes them taste better.

So here’s a side dish you can make in under 20 minutes if you are a fast dipper. Let me know what you think. I enjoyed having them again.  Ate way too many. They go down easy when they’re hot.  Less guilt and soooooo worth revisiting!

Ingredients

Instructions
  1. Preheat oven to 400*F. Coat a large baking sheet with cooking spray.
  2. In a large gallon size ziplock bag, combine flour, garlic powder, mustard powder and salt. Add onions and toss to coat.
  3. Place greek yogurt in a large bowl and toss onions to coat (use your hands for best result)
  4. Place bread crumbs in a separate large bowl, add onions and toss to coat. Transfer onions to prepared baking sheet and spray onions with cooking spray.
  5. Bake until golden brown, 35 minutes. Serve hot. Yields about 1/2 an onion per serving.
