Crispy Lettuce Picadillo Turkey Tacos

There are as many recipes for tacos on the internet as there are stars in the sky.

Not really, on the internet there are about 102,000,000 +1 from me.  You’re welcome {for both the google count search and my recipe}.

Seriously, its Tuesday so let’s talk tacos.  Tacos are one of my favorite things to eat on earth, and I can never say no to them! The most memorable mouth-watering tacos I’ve ever tasted were the ones I gobbled up in Santa Cruz, California in 2015.  Obviously, I never forgot them. Try as I might, I haven’t been able to duplicate them either. Meanwhile, I go on feeling nostalgic in snowy New England while I dream about the beach, surf and food.

I’ve been calorie conscience as of late, even though flour tortillas are my first choice, I happen to be hooked on tacos made with lettuce leaves for shells because you get that lovely crispy crunch, and lets not forget it puts a nice little crazy spin on things plus it just takes the carbs down a big ol notch.

First dice onion and then dice tomato…

Heat a skillet over medium-high heat and drizzle in a little (just a little) olive oil. Throw in some ground turkey.  Cook and hash it up until its completely browned.

Once the meat is browned, add some chili powder, cumin, oregano, diced tomatoes, water, salt and pepper then vinegar.

Instructions
  1. Make the picadillo: Heat oil in a large skillet over medium-high heat. Add onion, and cook until just starting to turn translucent, 3 to 5 minutes. Add turkey, and cook, breaking up pieces with the back of a wooden spoon, until browned, about 4 minutes. Stir in garlic, tomatoes, paprika, chili powder, oregano, salt, pepper, and cumin. Add water, and bring to a boil. Reduce heat to medium, and simmer until thick and very little liquid remains, about 18 minutes. Stir in vinegar.
  2. Spoon picadillo into each lettuce shell, and garnish with lettuce, onion, shredded cheese, and salsa picante.
