Easy, no mayo, throw together Broccoli Peach Salad

It’s another scorching summer day, the last thing anyone wants to do is stand over a stove or roasting hot oven. Why not take advantage of the summertime produce and create a delicious, healthy and filling salad that’s in season. Peaches anybody? Broccoli?  Bacon? Grapes? Sounds like a recipe for Easy, No Mayo, Throw Together, Broccoli Peach Salad to me!

Why should you make this salad?  Because its delicious.  Because, scorching hot summer days and mayo don’t mix. Because, it has fresh veggies and fruit. Because it will utilize the ingredients in your refrigerator crisper drawer. So, just in case you need a reason to stick your face in the refrigerator. As I mentioned earlier, its hot outside, make this salad.

As far as I’m concerned, recipes are important only to a point. This recipe is completely customizable. If don’t like peaches, use apples.  If you don’t like grapes, use Craisins.  If you don’t like bacon, we can’t be friends {just kidding}, use cheddar cheese. If you’re sensitive to dairy, use chicken.  If you’re vegetarian,  use tofu {I’m running out of ideas}.  Did I mention its hot? If you don’t have walnuts, use pecans.  If you DO like bacon and cheddar cheese, use both. What’s more important than following the recipe I’m sharing? Using simple, quality ingredients in a new way.

Voila, I created a unique and fresh summer salad. The key to a successful experiment in the kitchen, as with most of my recipes, is preparation and using whats on hand. Getting peaches from an orchard or farmer’s market will not only provide the freshest and often times biggest fruit, but it’s usually easier to find fruit that’s ripe.

When you’re slicing the Peaches, you want to use those that are still slightly firm so that they don’t turn to mush as soon as you take your first cut. It also is helpful to cut the broccoli into tiny bite size pieces.

      Ingredients

      Instructions
      1. Place the chopped peaches in a large mixing bowl. Add the chopped bacon, broccoli florets, grapes, walnuts, and red onion and stir until well combined.
      2. In a separate dish, combine the plain greek yogurt, sugar and apple cider vinegar and stir until combined. Add the mayo mixture to the other ingredients and stir until well coated. Store in the refrigerator and serve chilled or at room temperature.

      Creating this hearty salad could not be easier. None of the steps take more than a few minutes, and if you have any experience using a knife and cutting board, you should be fine. The lack of cooking also means that it’s pretty much impossible to mess up this recipe.
