The holiday baking season is upon us. Time to pull out all the stops. Wait! Who’s got time for stops pulling?  I know I don’t. You better believe, whatever I make this holiday season… it needs to be quick. November’s Recipe Redux is “A healthy holiday dessert that I will be sharing with family and friends.”  In this case, you can’t get much quicker than an Ice Box Cake, and with a few ingredient tweaks you can’t get much healthier!

I feel like I’ve been a little more open to pumpkin season this year than in years past, and my family has thoroughly enjoyed a pumpkin soup I made a few weeks ago and now this No Bake Pumpkin Graham Ice Box Cake for Thanksgiving.

Instructions
  1. In a large bowl, beat almond milk and dream whip on high with an electric mixer until soft peaks form. Add in maple syrup, 1 tsp vanilla extract and beat until stiff peaks form. Divide and set aside 1 cup in the refrigerator.
  2. Add spices, 1 tsp vanilla extract and pumpkin and fold in whip topping just until incorporated with spiced pumpkin.
  3. Place one layer of graham crackers into the bottom of an 8x8" pan. Top with ¼ of the pumpkin mixture.
  4. Repeat layers 3 more times, so that there are 4 layers of graham crackers each topped with ¼ of the pumpkin mixture.
  5. Refrigerate at least 4 hours, until cake is set and graham crackers have softened. Cut into squares and serve with reserved whipped topping.
