Power Plant Taco Bowl Recipe

It’s time for a Recipe Redux! All you need is 8 ingredients and 15 minutes for the most powerful, protein packed plant taco bowl ever.  Yes, it really is that easy and quick!

As much as I love tacos {and I make a lot of them} I usually make them with grilled chicken.  So this recipe was super easy because I basically left the chicken out and added some crushed walnuts in place and put it in a bowl! Now that we’ve tried it, it is seriously a favorite.

We make various Mexican dishes at home like tacos, fajitas, huevos rancheros, you name it. And obviously we make guacamole, all-the-guacamole PLEASE! I love how easy Mexican food is and how you can really get it together in a flash, don’t you?!

Back in the day, I used to eat taco meat {ground beef} when I ate tacos or burritos, then at some point, I switched to ground turkey. I remember my Mom used to make ground beef tacos all the time with hard shell tacos {outta the yellow box} and I would literally top it with everything there was, iceberg lettuce, shredded cheese, salsa and sour cream….everything except for guacamole!  Because I never liked guacamole as a kid, I always thought it looked like gross green sludge.  As I got older {and wiser}, my taste changed…now it’s avocado and guacamole, tons of veggies, fish and now this plant-based substitute with walnuts.

For this Power Plant Taco bowl, I combined a bunch of ingredients like kale, corn, black beans, avocado in the bowl. As soon as I started assembling it, I knew that I could add more.  Back to the refrigerator I went and out came the red bell pepper, pico de gallo in addition to the black olives, walnuts and blue corn chips from the cabinets.  Viola!

      1. Assemble 2 bowls with mixed kale greens, corn, black beans, avocado, pico de gallo, black olives red bell pepper and walnuts. Blue corn chips optional.
      2. Add desired amount to each bowl, Enjoy!
