When I think of budget meals, I think of two things. I think of simple ingredients and I think of chicken. This version is made up of boneless skinless chicken breast paired with sweet potato, brussel sprouts and apple. It tastes like the very definition of winter, and I wanted to give it a healthy upgrade. So, I skipped breading and frying the chicken and coated it with herbs and spices then slow cooked it instead. Off we go!
Because at this point, January is escaping me. Time is flying by and I’m having a hard time keeping up. I cannot believe it’s already mid month! This meal is an excellent example of what can happen when you lack a plan. It is simple to throw together when you don’t have time to spend in the kitchen. Real food, no filter.
There are tons of ways to make chicken. Of course, sometimes my heart is not into cooking. As a result, I tend to create what I like to call “unsupervised” meals. In other words, I like to toss the chicken in the crock pot and get on with my life. Later on, I put the veggies in the oven and forget about them until the timer goes off. At under $3 a serving, what could be easier or more affordable?!
Sometimes a victory is getting an inexpensive meal on the table and calling it a day. I call this recipe redux a win!
