Sweet and Zesty Italian Chicken

To start off this fabulous summer season, I’m sharing one of my faaaavorite recipes in the whole wide world. Fresh Peach Salsa! I don’t think it’s any secret that I love recipes with sweet and savory ingredients, remember my Toasted Coconut PB Protein Bites?
Dice the peaches. I liked the slightly larger dice for peaches to give them more of the center stage in this salsa. No need to peel them. You won’t notice the peels and the color is prettier with the peel on. Transfer peaches to your bowl.

Peaches aren’t in season until July here in New England. Why wait until you have oodles of ripe peaches to figure out what to do with them!?
The first time I made this fresh, fruity salsa was for a family picnic late last summer. Everyone wanted the recipe. Now, without fail someone makes a version of this, for just about every family gathering—and I have to keep reminding everyone who introduced it! Ahem.
2 Cups Chopped Fresh or Canned Peaches
1/4 Cup Red Onion chopped
1/4 Cup Red Bell Pepper chopped
1 Jalapeno seeded chopped (or to taste)
2 Tbls Orange Juice
2 tsp Lime Juice
1 Tbls Cilantro minced
1/4 tsp salt (or to taste)
In a small bowl, combine salsa ingredients; cover and refrigerate until serving.
It pairs well with grilled chicken, fish or toasted pita crisps. Sweet and savory, it works as a topping as well as a mix-in, it goes with everything. Literally.
And while we’re having this chat, let’s be honest: fruit salsa is a very clear reminder of my love for fresh, healthy and unpredictable. Any time I can sub out a tiresome ingredient (aka: predictable tomato) and throw in a interesting fruit…it’s happening.
