Toasted Coconut PB Protein Bites

If you love coconut, you’ll love these bites!  They’re bite-sized perfection if you have a sweet tooth, but are also super satisfying and filling.  I tried out some other recipe versions for protein balls online, but felt like they were lacking some *Oomph.  I began to formulate my own version, this is what I came up with.  Simple to make and a good blend of protein, carbs and fat.  Honestly, naming this recipe was harder than actually making it!  Roll-em up ahead of time and enjoy them as a pre or post workout snack, mid-afternoon pick me up or after dinner treat.

Toasted Coconut PB Protein Bites

Toasted Coconut PB Protein Bites

  • 1/2 cup natural peanut butter
  • 1/2 cup honey
  • 3/4 scoop protein powder (vanilla or chocolate)
  • 1/3 cup old fashioned rolled oats
  • 1 Tablespoon Chia Seeds


  • 1/2 cup of toasted unsweetened coconut flakes


1 – Place peanut butter and honey in a microwavable bowl.  Microwave for 10-15 seconds, until peanut butter is softened.  Mix together.

2 – Add in remaining ingredients to peanut butter and honey in a large bowl.  Roll into 10 balls (about one tablespoon per serving)

3 – Roll them in toasted coconut flakes

4 – Refrigerate to firm, overnight for best results.  Enjoy!
